Broccoli Soup

A smooth, creamy soup

Ingredients
  • • 2 tablespoons butter, ghee or coconut oil
  • • 1 medium onion, chopped
  • • 2 cloves garlic, minced
  • • 1½ pounds broccoli (use both heads and stems)
  • • 4 cups vegetable broth
  • • 1/2 cup water
  • • 1/2 teaspoon sea salt or to taste
  • • 3/4 teaspoon black pepper
Instructions
  • • Heat oil in a large pot and saute onion and garlic over low to medium heat until soft; about 7 minutes.
  • • Add broccoli and saute until bright green; about 5 minutes.
  • • Add broth, water, salt and pepper.
  • • Turn heat to med/high and cook until broccoli is tender; 15-20 minutes.
  • • Puree hot soup in tiny batches in a blender until smooth and creamy.
  • • Reheat soup and serve
