Roasted Beet Salad

Nutrient dense tasty beet salad

Ingredients
  • • 3 large beets, cubed and roasted
  • • 1 cup celery, chopped
  • • 1 large avocado, diced
  • • 2 tablespoons kalamata olives, diced
  • • 1 tablespoon lime juice
  • • 2 tablespoons olive oil
  • • Sea salt and black pepper to taste
Instructions
  • • Peel and cube beets (approx. 1/2”).
  • • Roast beets in oven at 325 degress until tender, approx. 45 minutes.
  • • Once the beets are roasted and cooled, chop celery and olives and dice the avocado.
  • • Toss beets, celery, olives and avocado with olive oil and lime juice.
  • • Add salt and pepper to taste.
